From the initial email we knew that Laura and Gunnar’s Wedding Day was going to be something truly unique. With mentions of Swedish traditions, we were looking forward to see what was to come. The couple’s influences from their heritage were not only applied to the traditions on the day, but also through some subtle nods in the menu.
Guests arrived to Champagne (and a little rain!) alongside a selection of traditionally British canapés. Baby Yorkshire Puddings with Rare Beef & Horseradish, Quails Scotch Eggs and Cured Salmon on Cucumber were some of the items circulated for guests to enjoy at the stunning Manor House.
After enjoying each other’s company in the historic Centre Hall and the views of the Sunken Garden on the Terrace, the Wedding Party moved across to the Tithe Barn for dinner and speeches (oh the speeches!). Singing in harmony with the rustic barn, Laura and Gunnar chose details to accentuate the features of the venue. We loved the use of Ufton Court’s wood slices to add height to the floral arrangements. Our luxury tableware was chosen alongside classic white linen.
An opening speech introduced the Wedding Breakfast, which began with a hint of Sweden: Assiette of Salmon (Gravlax, Hot Smoked & Fish Cake), Pickled Cucumber, Sauce Gribiche and Sweet Mustard Dressing. For their main course, they switched to Hearty British Fare: Rump of Lamb, Mint Crushed Potatoes, Chargrilled Spring Vegetables, Pea Shoots with a Chicken option available.
Laura and Gunnar wanted every piece of their cake to be eaten, and so instead of opting for a plated dessert, we served the cake on wooden boards to each table with a selection of accompaniments.
As any caterer will say – Speeches can certainly be testing, and we were up against the clock more than ever for this fun-filled Wedding. Traditionally, Swedish Weddings are filled to the brim with plenty of speeches, and for Laura and Gunnar, that totalled nearly 12! It involved fun quizzes, IKEA instructions for drinking Schnapps and laughter galore.
The laughter continued into the evening, where guests danced the night away whilst being fuelled by a traditional Country Ploughmans, with Cured Meats, English Cheeses and Seasonal Meats. It was a pleasure to meet Laura and Gunnar and we’re wishing them all the best on their incredible 3 month (!!!!) honeymoon.
